Stuffed Cherry Tomatoes... they really do look (and taste) better than this picture
Recipe:
20-30 Cherry Tomatoes
1 lb bacon, cooked and crumbled
1/2 cup mayonnaise
1/3 cup chopped green onions (chives work pretty well here, too)
3 Tbsp FRESH parmesean cheese, grated
2 Tbsp fresh, minced parsley
Cut a thin slice off each tomato top. Scoop out the insides and toss it (i use a melon baller for this step). Invert onto paper towels and allow to drain. In a medium bowl, stir together bacon, mayonnaise, green onions, parmesean, and parsley until combined. Spoon mixture into tomatoes and chill.

ooh, Maggie, that looks and sounds wonderful! I made your Lasagna Roll Ups last week for company (the recipe that uses spinach and has a bechemel sauce)
